Antipasto Crab Salad


Loosely based on the ingredients in antipasto, this crab salad is loaded with both vegetables and flavor. It’s as easy to make as it is to eat and enjoy! Replace the crab with chopped cooked chicken or chopped grilled tofu, if you prefer.

 

Ingredients:

2 (8 ounce) packages artificial crab, chopped

1 (14 ounce) can artichoke hearts, drained and chopped

2 (2.5 ounce) cans sliced black olives, drained

½ cup lowered-fat mayonnaise

8 pepperoncini, sliced

1 teaspoon dried rosemary, crushed

1/2 teaspoon fennel, crushed or fresh-ground

¼ teaspoon fresh-ground black peppercorn mix


Directions:

Combine all ingredients in a medium bowl, and stir to mix well.


Chill for at least 4 hours or overnight before serving for best flavor.

Season the good fresh beef fillets with salt and black pepper. Heat olive oil in a pan over high heat and sear the fillets for 2 minutes per side until it fully browned. Remove the beef from the pan and brush with a thin layer of mustard. Let it cool.
