Lemon-Cheddar Pasta Salad

This light, refreshing pasta salad is quick and easy to prepare, and it's easy to garnish it to make it worthy of any springtime get-together. Just cut a thin slice of lemon from the center before juicing the lemon, then cut halfway through the lemon, being careful not to cut through the center. Fold the lemon slice into an S-shape to garnish the dish.
Ingredients:
1 (12-ounce) package small pasta (penne, bowties, elbows, etc.)
1 bunch asparagus, trimmed and cut in 1" pieces on the diagonal
1 cup reduced-fat mayonnaise
1/2 cup shredded extra-sharp Cheddar cheese
4-5 green onions, thinly sliced on the diagonal
2 tablespoons fresh lemon juice (about 1 medium lemon)
2 tablespoons Dijon mustard
1 garlic clove, minced
Directions:
Cook pasta according to manufacturer's directions. Add asparagus in last 3 minutes of cooking. Drain and set aside.
Meanwhile, combine mayonnaise, cheese, green onions, lemon juice, Dijon, and garlic in salad bowl. Add pasta and asparagus, and stir well to combine. Garnish with lemon curl.
